  • 4 oz baby red potatoes, quartered: These potatoes are buttery and have a lovely texture when cooked. Russet potatoes can also be used if that’s what you have on hand.

  • 1/4-1/2 avocado, sliced, plus lime juice and sea salt: Avocado adds creaminess and healthy fat, enhancing the overall taste.
  • Scallions, thinly sliced: These offer a slight crunch and freshness that balance the dish.
  • Fresh salsa: A tasty topping that can elevate the flavor profile of the bowl.

How to Make Savory Breakfast Bowl (High Protein, Easy & Paleo)

  1. Prepare the Potatoes: Place the quartered baby red potatoes in a microwave-safe bowl. Heat on high for 3 minutes to soften them slightly. Meanwhile, heat a medium skillet over medium-high heat and add 1 tablespoon of ghee (or oil). Add the potatoes to the skillet, then sprinkle lightly with sea salt, black pepper, smoked paprika, garlic powder, and chili powder.
  2. Sauté the Potatoes: Cook the potatoes for about 3 minutes or until they are browned and crispy. Use a slotted spoon to move them to a bowl and cover with aluminum foil to keep warm.
  3. Cook the Kale: Add more ghee to the skillet, then toss in the chopped kale along with 1 tablespoon of water. Cover the skillet to wilt the kale, and once it’s cooked to your liking (usually about 2-3 minutes), sprinkle with sea salt and black pepper. Transfer to the same bowl as the potatoes.
  4. Brown the Sausage: In the same skillet, add the ground pork sausage and cook for about 2 minutes, breaking it apart with a spatula, until browned and cooked through.
  5. Fry the Egg: Move the sausage to the bowl to keep warm. Adjust the heat to medium and add the remaining tablespoon of ghee to the skillet. Crack in the egg and fry it to your preferred doneness, spooning the hot ghee over the top until the whites are set.
  6. Assemble Your Bowl: Once the egg is cooked, add it to the bowl with the potatoes, kale, and sausage. Top with slices of avocado drizzled with lime juice and a sprinkle of sea salt, followed by the scallions and fresh salsa, if desired. Serve immediately and savor every bite!

Storing & Reheating

To store leftovers, keep the components in separate airtight containers in the refrigerator for up to 3 days. Make sure to let everything cool down to room temperature before sealing. For longer storage, you can freeze the potatoes and cooked sausage in a freezer-safe container for up to 3 months. When you’re ready to enjoy again, reheat in the microwave or on a skillet until warmed through. Keep in mind that while flavors intensify, the textures may soften slightly upon reheating; consider crisping the potatoes in a skillet for a few minutes to refresh them.

Chef’s Helpful Tips

  • Ensure your potatoes are dried off after microwaving for better crispiness.
  • Use room temperature eggs for uniform cooking when frying.
  • Feel free to switch out kale with other greens you enjoy or have on hand, such as Swiss chard or collards.
  • To avoid overcooking the egg, watch closely as it cooks; every stovetop is slightly different.
  • Add extra seasoning according to your taste; feel free to spice it up with hot sauce!

Each bite of this Savory Breakfast Bowl brings together various textures and wholesome ingredients, making it a fulfilling meal that’s hard to resist. You’ll not only feel good about what you’re eating but will also likely revisit this dish time and again.
