Description

This Burrata Peach Salad combines juicy peaches with savory grilled corn and creamy burrata, topped with a vibrant balsamic vinaigrette. It’s a quick, healthy dish that brings out the best of summer flavors, ideal for a light dinner or gathering with friends!


Ingredients

  • 3 peaches sliced
  • 3 ears of corn husks removed, grilled and kernels cut off
  • 2 balls burrata torn into chunks
  • 3 tablespoons pepitas toasted
  • basil leaves
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon dijon mustard
  • 1 tablespoon maple syrup or honey
  • 1 tablespoon olive oil
  • Kosher salt and freshly ground black pepper to taste

Instructions

  1. Rub olive oil and salt onto the ears of corn and grill them on a preheated grill at 400°F for 8-10 minutes, rotating occasionally until evenly cooked.
  2. Once grilled, let the corn cool slightly and cut off the kernels from the cob.
  3. In a jar or bowl, combine balsamic vinegar, dijon mustard, maple syrup or honey, and olive oil. Shake or whisk to combine, then set aside after tasting for seasoning.
  4. On a serving platter, arrange the sliced peaches and scatter the grilled corn over them.
  5. Tear the burrata into chunks and place them atop the salad with peas and basil leaves. Drizzle the balsamic vinaigrette over the salad and serve immediately.

Notes

Grilled corn adds a smoky flavor, but fresh corn can be used if preferred.
Toasting the pepitas enhances their flavor and crunch.
Feel free to customize the herbs with arugula or mint for variation.
