These Zucchini Fritters are incredibly flavorful and easy to make, combining fresh zucchini, eggs, and cheese for a quick and healthy meal that’s fun to enjoy.

- 3 tbsp avocado oil, canola oil, or vegetable oil for cooking
- 2 cups shredded zucchini – squeezed (2 large zucchini, around 1.5 lbs)
- 1 cup panko bread crumbs
- 2 eggs
- 1/3 cup fresh grated parmesan cheese
- 1/4 cup finely shredded mozzarella cheese
- 2 garlic cloves, minced
- 1 tsp salt
- 1/2 tsp fresh cracked black pepper
Instructions
- Grate the zucchini using a box grater, then place the grated zucchini into a mesh bag or cheese cloth and squeeze out as much liquid as possible.
- In a mixing bowl, combine the squeezed zucchini with the remaining ingredients and mix until well combined.
- Heat a large pan over medium heat, then lower the temperature slightly. Add oil to the pan.
- Using an ice cream scoop, portion out the zucchini mixture and shape it into fritters, placing them carefully into the pan.
- Cook the fritters for 4-6 minutes on each side, being careful not to disturb them until they are ready to flip.
Notes
Ensure you squeeze out all excess moisture from the zucchini to prevent soggy fritters.
Cook the fritters over medium to medium-low heat for even cooking.
If making multiple batches, add more oil to the pan as needed.
