- 1 tablespoon balsamic vinegar
- ⅓ cup olive oil
- ¼ cup sun dried tomatoes, chopped (and drained from olive oil)
- 3 tablespoons almond milk, or regular milk
- ¼ teaspoon salt
- ⅛ teaspoon ground black pepper
- 2 tablespoons pasta water
- 8 oz. whole wheat linguine
- ½ tablespoon olive oil
- ½ yellow onion, thinly sliced
- ½ cup fresh basil, chopped
- ¼ cup sun dried tomatoes, chopped (and drained from olive oil)
- ¼ cup freshly grated parmesan cheese
Instructions
- Cook the linguine according to the package instructions and reserve 1 cup of pasta water before draining.
- Blend all sauce ingredients in a blender until smooth, adding more almond milk or pasta water if the consistency is too thick.
- In a large saucepan, heat ½ tablespoon of olive oil over medium-high heat. Add the sliced onion and sauté until translucent.
- Add the drained pasta and sauce to the saucepan, mixing well to combine.
- Stir in fresh basil and chopped sun-dried tomatoes, mixing thoroughly.
- Top with balsamic vinegar, freshly ground black pepper, and parmesan cheese, if desired. Serve and enjoy!

Feel free to substitute almond milk with regular milk if preferred.
