- 1 medium lime, juiced (about 2 tablespoons)
- 1 tablespoon extra virgin olive oil
- 1 pinch kosher salt
- ½ seedless watermelon, peeled, cut into 1-inch cubes (about 6 cups)
- 2 cups cucumber, sliced in half lengthwise, then cut into half-moon shapes (we used mini cucumbers)
- ¼ cup chopped mint leaves (about 15 leaves)
- ¼ cup chopped basil leaves (about 15 leaves)
- ½ cup (100 g) feta cheese, crumbled
Instructions
- In a small bowl, combine honey, lime juice, olive oil, and kosher salt. Whisk until smooth and well blended, then set aside.
- In a large bowl, combine watermelon cubes, cucumber halves, mint leaves, basil leaves, and feta cheese.
- Drizzle the dressing over the salad mixture and gently toss to combine all ingredients.
- Serve immediately for the freshest flavor.
Notes
For added crunch, include nuts like pistachios or walnuts.
Feel free to swap feta for goat cheese for a different flavor.
This salad is best enjoyed fresh but can be refrigerated for a short time.
