Description

Enjoy the refreshing Watermelon Feta Salad, a perfect blend of sweet watermelon, tangy feta, and fragrant herbs. Ideal for quick meals and summer gatherings!


Ingredients

  • 2 tablespoons honey
  • 1 medium lime, juiced (about 2 tablespoons)
  • 1 tablespoon extra virgin olive oil
  • 1 pinch kosher salt
  • ½ seedless watermelon, peeled, cut into 1-inch cubes (about 6 cups)
  • 2 cups cucumber, sliced in half lengthwise, then cut into half-moon shapes (we used mini cucumbers)
  • ¼ cup chopped mint leaves (about 15 leaves)
  • ¼ cup chopped basil leaves (about 15 leaves)
  • ½ cup (100 g) feta cheese, crumbled

Instructions

  1. In a small bowl, combine honey, lime juice, olive oil, and kosher salt. Whisk until smooth and well blended, then set aside.
  2. In a large bowl, combine watermelon cubes, cucumber halves, mint leaves, basil leaves, and feta cheese.
  3. Drizzle the dressing over the salad mixture and gently toss to combine all ingredients.
  4. Serve immediately for the freshest flavor.

Notes

For added crunch, include nuts like pistachios or walnuts.
Feel free to swap feta for goat cheese for a different flavor.
This salad is best enjoyed fresh but can be refrigerated for a short time.
