Description

These Vegan Key Lime Pie Bars offer a refreshing taste that combines creamy filling with a crunchy crust. Made from wholesome ingredients, they’re perfect for any occasion and a breeze to make in your kitchen.


Ingredients

  • 1 1/2 cups Biscoff cookie crumbs or honey-free graham crackers
  • 3 tablespoons granulated sugar
  • 6 tablespoons vegan butter, melted
  • 1 (11.25 ounce) can coconut or oat sweetened condensed milk
  • 10.8 ounces Mori Nu silken tofu, drained
  • 1 cup granulated sugar
  • 3 tablespoons lime zest
  • 2/3 cup fresh lime juice from key limes if possible
  • 4 tablespoons cornstarch

Instructions

  1. Preheat the oven to 350 degrees F.
  2. In a medium bowl, combine the cookie crumbs, sugar, and melted vegan butter until it resembles moist crumbs.
  3. Press the mixture into a parchment-lined 8-inch square baking pan and bake for 10 minutes. Remove from the oven and let it cool.
  4. In a blender, combine the sweetened condensed milk, silken tofu, sugar, lime zest, lime juice, and cornstarch. Blend until smooth.
  5. Transfer the blended mixture to a medium saucepan, cook over medium-high heat, and whisk constantly until the filling thickens and boils. Remove from heat.
  6. Pour the filling over the cooled crust and let it set at room temperature for about 30 minutes before refrigerating for at least 3 hours to firm up.
  7. Serve chilled, optionally topped with vegan whipped cream and a sprinkle of extra lime zest.

Notes

Make sure to let the filling set properly in the refrigerator for the best texture.
You can use fresh key limes for the juice if available, as they enhance the flavor.
These bars can be kept in the refrigerator for several days, making them perfect for meal prep.
