  • 3 tablespoons finely grated parmesan cheese divided, plus more for sprinkling on the ramekins
  • ½ teaspoon dried lavender
  • ½ medium lemon, zested
  • ⅛ teaspoon kosher salt
  • ⅛ teaspoon ground black pepper
  • 3 ounces soft goat cheese
  • 1 ounce ricotta cheese
  • 1 tablespoon fresh thyme leaves
  • 1 tablespoon honey (orange blossom honey recommended)
  • 3 large eggs separated
  • ¼ cup low-fat milk
  • 2 teaspoons all-purpose flour
  • butter for the ramekins

Instructions

  • Preheat your oven to 375˚ F and prepare the ramekins by buttering them and sprinkling grated Parmesan cheese inside.
  • Crush the dried lavender with your fingers to create a powder, and mix it with lemon zest, 1 tablespoon of Parmesan, salt, and pepper in a bowl.
  • In a medium bowl, blend together the goat cheese, ricotta, 2 tablespoons of Parmesan, thyme, honey, egg yolks, milk, and flour until well combined.
  • In a separate bowl, whip the egg whites until they form a firm peak. Be careful not to over-whip, as it should be easy to fold into the cheese and yolk mixture. Gently fold in the egg whites in thirds using a spatula, leaving some lumps.
  • Place the ramekins into a baking dish and add hot water until it reaches halfway up the sides of the ramekins. Spoon the mixture into each ramekin until they are two-thirds full.
  • Wipe the sides of the ramekins with a cloth to ensure the mixture rises smoothly while baking.
  • Bake for 20 minutes or until the tops are browned and the soufflés are firm to touch. Allow them to cool in the ramekins for 15 minutes. They may collapse slightly and pull away from the sides. To serve, carefully run a knife around the edges and turn the ramekins upside down, or serve directly in them.
  • Serve warm with a simple salad.

Notes

Using a high-quality goat cheese enhances the flavor of the soufflés.
Ensure not to over-whip the egg whites; they need to remain light and airy for best results.
For a variation, try adding different herbs or spices to suit your taste.
