Description
These Valentine strawberry yogurt bites are a delightful treat made with fresh strawberries, creamy yogurt, and granola. Easy to prep and perfect for a sweet snack or a refreshing dessert!
Ingredients
Scale
- ½ cup granola, more for topping
- 1 cup yogurt of choice
- ½ cup fresh strawberries, hulled and diced
- ¾ cup fresh strawberries, sliced or chopped
- ¼ cup granola, smaller pieces work better
Instructions
- Line a 12-cup muffin pan with muffin liners or use a 12-cup silicone baking pan.
- Sprinkle about 2 teaspoons of granola into the bottom of each cup. Set aside.
- In a medium bowl, combine yogurt and diced strawberries. Use a pastry cutter or fork to mash the strawberries into the yogurt until mostly combined with a few pieces remaining.
- Stir and fold the mixture until well-combined using a rubber spatula or wooden spoon.
- Spoon 2 tablespoons of the strawberry yogurt mixture into each cup, smoothing out each layer by tapping the pan.
- Press a tablespoon of sliced strawberries into the top of each cup.
- Sprinkle about 1 teaspoon of granola over the strawberries.
- Freeze the tray until the bites are firm, about 2-4 hours.
- Once frozen, remove each yogurt bite from the tray, let them thaw for a few minutes, then enjoy.
Notes
You can customize the yogurt flavor to your liking, such as vanilla or strawberry yogurt.
For a sweeter bite, consider adding honey or maple syrup to the yogurt mixture.
Store any leftover bites in an airtight container in the freezer.
