Ingredients

  • 15 ounces black beans, drained and rinsed
  • 15 ounces corn, drained
  • 1 medium tomato, diced
  • 1 jalapeño, seeds and ribs removed and diced
  • 1/4 red onion, diced
  • 2 garlic cloves, minced
  • 2 tablespoons lime juice
  • 1 tablespoon olive oil
  • 2 tablespoons minced fresh cilantro
  • 1/2 teaspoon cumin
  • 1/2 teaspoon kosher salt or 1/4 teaspoon table salt
  • dash freshly ground black pepper

Instructions

  1. In a large bowl, combine the black beans, corn, diced tomato, jalapeño, red onion, minced garlic, lime juice, and olive oil.
  2. Gently stir all the ingredients together until well mixed.
  3. Taste the salsa and add more salt and pepper according to your preference.
