Description

This Street Corn White Chicken Chili offers a unique twist with tender chicken, sweet corn, and a creamy base, making it a satisfying meal perfect for any occasion.


Ingredients

  • 2 tablespoons extra virgin olive oil, divided
  • 1 small yellow onion, finely diced
  • 1 teaspoon garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon chili powder
  • ½ teaspoon ground cumin
  • 4 cups chicken broth
  • 2 cups frozen corn
  • 1 can (15 ounces) great northern beans, drained
  • 3 cups rotisserie chicken, shredded
  • ¼ cup cornstarch
  • ¼ cup cold water
  • 1 ½ cups sour cream
  • ½ cup monterey jack cheese, shredded
  • 2 tablespoons freshly squeezed lime juice, about 1 lime
  • salt and pepper, to taste
  • queso fresco, crumbled
  • 1 medium jalapeño, diced
  • fresh cilantro, chopped
  • tortilla strips

Instructions

  1. In a large Dutch oven, heat 1 tablespoon of oil over medium heat.
  2. Add the diced onion, cooking until softened, about 4 to 5 minutes.
  3. Stir in the garlic, oregano, chili powder, and cumin, cooking for an additional minute.
  4. Pour in the chicken broth and mix well, bringing to a gentle simmer.
  5. In a separate skillet, heat the remaining tablespoon of oil and add the frozen corn, cooking until lightly charred, about 5 minutes. Remove from heat.
  6. Once simmering, add the beans, shredded chicken, and charred corn to the broth.
  7. In a small bowl, whisk together cornstarch and cold water until smooth, then stir into the chili. Simmer for 8 to 10 minutes until slightly thickened.
  8. Reduce heat, stirring in the sour cream, shredded cheese, and lime juice, seasoning to taste with salt and pepper.
  9. Serve hot, topped with queso fresco, jalapeño, cilantro, and tortilla strips if desired.

Notes

For extra flavor, use homemade chicken broth.
Feel free to adjust the spice level by adding more jalapeños or chili powder.
