- 1/4 cup powdered sugar
- 2 tablespoons cornstarch
- 2 packets of unflavored gelatin
- 1 cup water divided
- 3/4 cup granulated sugar
- 1/2 cup light corn syrup
- 1/4 teaspoon salt
- 3 ounces strawberry jello
- 3 teaspoons strawberry extract
- 2 drops red gel food coloring
Instructions
- Bloom the unflavored gelatin in a small bowl with 1/2 cup of water.
- In a large saucepan, combine granulated sugar, light corn syrup, remaining 1/2 cup of water, and salt. Heat over medium until it reaches 240°F.
- Stir in the strawberry jello until well mixed in the saucepan.
- Add the bloomed gelatin to a stand mixer bowl, then gradually pour in the hot sugar mixture to dissolve the gelatin.
- Whisk the mixture on high speed for 8 to 10 minutes until it becomes fluffy and stiff.
- Prepare an 8×8 inch square pan by lightly spraying it with nonstick baking spray.
- In another bowl, mix powdered sugar and cornstarch, setting some aside to dust later.
- Dust the prepared pan with the sugar and cornstarch mixture.
- In the last minute of mixing, add strawberry extract and food coloring, continuing to beat until blended.
- Pour the marshmallow mixture into the prepared pan.
- For added visuals, add 1-2 drops of food coloring and swirl it with a skewer if desired.
- Dust the top with the reserved sugar/cornstarch mixture to cover the marshmallows.
- Allow the marshmallows to firm up for at least 4 hours; overnight is recommended.
- Using a sharp knife or pizza cutter, cut the marshmallows into 12 pieces, dusting the knife if it gets sticky.
- Toss the pieces in extra powdered sugar to prevent stickiness.
