Description

These Strawberries and Cream Cookies feature a delicious combination of flavors with fresh strawberries, creamy white chocolate, and a soft, buttery texture. Perfect for any occasion, these cookies are easy to prepare and are sure to impress family and friends with their delightful taste.


Ingredients

  • 3 cups (360 g) all-purpose flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup (227 g) unsalted butter, room temperature
  • 1 and 1/4 cups (248 g) granulated sugar
  • 1/4 cup (53 g) light brown sugar, packed
  • 1 tablespoon (14 ml) vanilla extract
  • 2 large eggs, room temperature
  • 11 ounces white chocolate chips
  • 2 1.2 ounce bags (68 g) freeze-dried strawberries

Instructions

  1. Preheat the oven to 325°F and line two large baking sheets with parchment paper.
  2. In a large bowl, whisk the flour, baking soda, and salt together, then set aside.
  3. In a stand mixer or large bowl, combine the butter and both sugars, beating on medium speed for about 3 minutes until light and fluffy. Scrape down the bowl as needed and add the vanilla extract.
  4. Reduce the speed to medium-low and beat in the eggs one at a time, ensuring each is mixed in well before adding the next. Scrape down the sides and bottom of the bowl as required.
  5. Lower the mixer speed and add the flour mixture, mixing until just combined. Fold in the white chocolate chips and freeze-dried strawberries until evenly distributed.
  6. Using a large cookie scoop, portion out 3 tablespoons (75 g) of dough, rolling it into a ball. Place the balls on the baking sheets with the side showing the most chocolate and strawberries facing up, leaving 2 inches between each.
  7. Bake one sheet at a time for 12-13 minutes, until the edges are golden and the centers remain soft.
  8. Remove from the oven, and if needed, carefully shape the cookies into a round form using a spatula. Press extra white chocolate chips on top for decoration if desired.
  9. Allow the cookies to cool on the baking sheets for 20 minutes before transferring them to a wire rack.

Notes

Make sure the butter is at room temperature for easier mixing.
These cookies can be stored in an airtight container for up to a week.
Pressing extra white chocolate on top gives an appealing look and enhances flavor.
