  • 1/4 cup avocado oil
  • 3 tablespoons lime juice
  • 1 tablespoon garlic, minced
  • 2 tablespoons light brown sugar
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon cayenne powder
  • 1 each chili in adobo sauce, seeds removed and minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 whole lime

Instructions

  1. Trim excess fat from the chicken breasts and place them in a freezer bag or between plastic wrap. Use a meat tenderizer or rolling pin to pound the thickest parts.
  2. In a bowl, whisk together the avocado oil, lime juice, minced garlic, brown sugar, chili powder, cumin, cayenne powder, and minced chili in adobo sauce until well combined.
  3. Pour the marinade over the chicken in the bag or a mixing bowl, ensuring all sides are coated. Refrigerate and let marinate for at least 2 hours, or up to 24 hours.

Notes

For best flavor, marinate the chicken overnight.
Adjust spice levels by adding more or less cayenne powder based on your preference.
