- 5 cups peaches, sliced
- 1/2 cup sugar
- 2 tbsp cornstarch
- 1/2 tsp vanilla
- 1 tbsp lemon juice
- 1/2 cup flour
- 1/2 cup brown sugar
- 1 tsp cinnamon
- 1/2 cup butter, cold & cubed
- 3/4 cup old-fashioned rolled oats
Instructions
- Preheat your oven to 350 degrees Fahrenheit and spray a pie pan with non-stick spray.
- In a medium bowl, pit, peel, and slice enough peaches to equal 5 cups and pour them into the bowl.
- Add sugar, cornstarch, vanilla, and lemon juice to the peaches and stir well.
- Transfer the peach mixture into the prepared pie pan.
- In a food processor, combine flour, brown sugar, and cinnamon, then pulse until mixed. Add the cold, cubed butter and process until crumbs form. Gently mix in the rolled oats.
- Evenly pour the oat mixture over the peaches in the pan.
- Bake for 30-35 minutes or until the top is golden brown.
Notes
Feel free to adjust the sugar based on the sweetness of your peaches.
