Description

This Simple Peach Crisp with Oat Topping combines juicy peaches with a crunchy oat topping that’s easy to make and perfect for sharing. It’s a comforting dessert that brings a taste of summer to your table, guaranteed to impress friends and family.


Ingredients

  • 5 cups peaches, sliced
  • 1/2 cup sugar
  • 2 tbsp cornstarch
  • 1/2 tsp vanilla
  • 1 tbsp lemon juice
  • 1/2 cup flour
  • 1/2 cup brown sugar
  • 1 tsp cinnamon
  • 1/2 cup butter, cold & cubed
  • 3/4 cup old-fashioned rolled oats

Instructions

  1. Preheat your oven to 350 degrees Fahrenheit and spray a pie pan with non-stick spray.
  2. In a medium bowl, pit, peel, and slice enough peaches to equal 5 cups and pour them into the bowl.
  3. Add sugar, cornstarch, vanilla, and lemon juice to the peaches and stir well.
  4. Transfer the peach mixture into the prepared pie pan.
  5. In a food processor, combine flour, brown sugar, and cinnamon, then pulse until mixed. Add the cold, cubed butter and process until crumbs form. Gently mix in the rolled oats.
  6. Evenly pour the oat mixture over the peaches in the pan.
  7. Bake for 30-35 minutes or until the top is golden brown.

Notes

Feel free to adjust the sugar based on the sweetness of your peaches.
Serve warm with a scoop of vanilla ice cream for an extra treat.
Store leftovers in an airtight container in the fridge for up to 3 days.
