Description

Shrimp Taco Bowls combine succulent shrimp, flavorful spices, and fresh vegetables over a bed of cauliflower rice. This dish is not only healthy but also quick to prepare, making it an ideal choice for a weeknight dinner that satisfies your cravings.


Ingredients

  • 1 lb large shrimp peeled + deveined
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • salt to taste
  • 2 tablespoons lime juice
  • 4 cups cauliflower rice frozen or fresh
  • 1 tablespoon olive oil
  • 2 cloves garlic minced
  • salt to taste
  • 1 tablespoon lime juice
  • 2 tablespoons cilantro chopped
  • 1/2 red onion thin sliced
  • 2 tablespoons lime juice
  • 1 tablespoon apple cider vinegar
  • pinch salt
  • 1/2 cup mayo paleo/whole30 friendly if needed
  • 1 1/2 tablespoons lime juice
  • 1/2 teaspoon honey optional
  • 1 clove garlic
  • 1/4 cup cilantro
  • salt to taste
  • 1 avocado cubed
  • 1 cup cherry tomatoes halved
  • 2 cups shredded lettuce or cabbage
  • 1/3 cup chopped cashews or pepitas

Instructions

  1. Start by pickling the onions – mix all ingredients and let them sit.
  2. Toast the nuts or seeds by heating a skillet over medium and toasting the pepitas or cashews for 3–4 minutes until golden.
  3. For the cauliflower rice, sauté minced garlic in olive oil, add cauliflower rice and salt, and cook for 5–6 minutes. Finish with lime juice and cilantro. Alternatively, heat frozen cauliflower rice according to package instructions.
  4. Season the shrimp with spices and olive oil, then cook in a hot skillet for 2–3 minutes on each side until opaque.
  5. Blend all sauce ingredients using an immersion blender or a whisk until smooth.
  6. Assemble the bowls by layering cauliflower rice, lettuce or cabbage, shrimp, tomatoes, avocado, pickled onions, and sprinkle with pepitas or cashews. Drizzle with the sauce as desired and enjoy!

Notes

Feel free to substitute shrimp with chicken or tofu for a different protein option.
Adjust the level of spiciness by adding more or less chili powder based on your preference.
The pickled onions can be prepared a day in advance for enhanced flavor.
