- 2 lbs boneless, skinless chicken breast
- 10 ounces rotel tomatoes with green chiles, drained
- ½ teaspoon salt
- ½ teaspoon garlic powder
- ½ teaspoon cumin
- ½ teaspoon chili powder
- ¾ cup shredded cheddar cheese
- freshly chopped cilantro
- freshly chopped green onions
Instructions
- Preheat the oven to 400˚F.
- In a bowl, combine salt, garlic powder, cumin, and chili powder. Season both sides of the chicken with this mixture and lay them flat in a large casserole dish.
- Spoon the drained Rotel tomatoes evenly over the chicken breasts. Sprinkle with shredded cheddar cheese on top.
- Cover the dish with foil and bake in the preheated oven for 25 minutes. Remove the foil and continue to bake for an additional 5-10 minutes, or until the chicken is cooked through and reaches an internal temperature of 165˚F.
- Garnish with freshly chopped cilantro or green onions before serving.
