Description

This Rotel Chicken Bake is a delightful dish featuring juicy chicken breasts, zesty rotel tomatoes with green chiles, and melted cheddar cheese. It’s quick to prepare, packed with flavor, and makes for a satisfying meal any night of the week.


Ingredients

  • 2 lbs boneless, skinless chicken breast
  • 10 ounces rotel tomatoes with green chiles, drained
  • ½ teaspoon salt
  • ½ teaspoon garlic powder
  • ½ teaspoon cumin
  • ½ teaspoon chili powder
  • ¾ cup shredded cheddar cheese
  • freshly chopped cilantro
  • freshly chopped green onions

Instructions

  1. Preheat the oven to 400˚F.
  2. In a bowl, combine salt, garlic powder, cumin, and chili powder. Season both sides of the chicken with this mixture and lay them flat in a large casserole dish.
  3. Spoon the drained Rotel tomatoes evenly over the chicken breasts. Sprinkle with shredded cheddar cheese on top.
  4. Cover the dish with foil and bake in the preheated oven for 25 minutes. Remove the foil and continue to bake for an additional 5-10 minutes, or until the chicken is cooked through and reaches an internal temperature of 165˚F.
  5. Garnish with freshly chopped cilantro or green onions before serving.

Notes

Make sure to check the internal temperature of the chicken for safe consumption (165˚F).
You can customize the toppings with other fresh herbs or serve it over rice for a complete meal.
