Description

  • 3 small flour tortillas
  • 2 tbsp coconut oil, melted
  • 1 tbsp honey
  • 1 tsp ground cinnamon
  • 1 cup whipping cream
  • 1/2 tsp natural sweetener, like Truvia
  • 1 tsp vanilla
  • 1 cup fresh berries (blueberries, raspberries, strawberries)
  • Optional: cocoa powder

Instructions

  1. Preheat the oven to 375 degrees Fahrenheit.
  2. Cut the tortillas into quarters using a pizza slicer.
  3. In a small bowl, combine the coconut oil and honey until well mixed.
  4. Brush both sides of each tortilla with the coconut oil mixture, then sprinkle with ground cinnamon.
  5. Arrange three tortilla triangles in a muffin pan to create a cup shape.
  6. Bake in the oven for 15 minutes, then remove from the pan and allow to cool.
  7. In a mixing bowl, combine the whipping cream, sweetener, and vanilla; beat until small peaks form.
  8. Spoon or pipe the whipped cream into each cooled tortilla cup.
  9. Top the whipped cream with fresh berries of your choice.
  10. If desired, sprinkle cocoa powder over the top before serving.

Ensure tortillas are pressed well into the muffin pan to maintain their shape while baking.
