- 2 1/2 cups (355 grams) fresh or frozen raspberries
- 7 tablespoons (125 grams) raspberry jam
- 1/2 teaspoon vanilla extract

Instructions
- Preheat the oven to 350 F (175 C) and line an 8"x8" pan with parchment paper.
- In a large bowl, mix flour, oats, granulated sugar, brown sugar, cinnamon, baking soda, and salt until combined.
- Cut unsalted butter into small cubes and add to the dry mixture, then mix until fully incorporated.
- Drizzle the vanilla extract over the mixture and work it into a dough that holds together.
- Scoop about 2/3 of the dough into the prepared pan and press it firmly to form a crust.
- In a separate bowl, mix together raspberries, raspberry jam, and a pinch of salt to make the filling.
- Spread the raspberry filling over the crust, leaving a small border around the edges.
- Sprinkle the remaining dough over the jam and lightly press it down.
- Bake for 30-40 minutes until golden brown and bubbling.
- Allow the bars to cool in the pan for about 2 hours before chilling in the fridge for at least 2-3 hours.
Notes
For a gluten-free version, use gluten-free rolled oats.
These bars can be frozen; just slice and freeze in a single layer.
