They feature a creamy blend of cream cheese and pumpkin puree, rolled in graham cracker crumbs, and dipped in smooth white chocolate. Easy to make, these truffles are a must-try for dessert lovers seeking a delicious homemade flavor.

Ingredients

Scale
  • 4 ounces cream cheese
  • 2 tablespoons powdered sugar
  • 1/3 cup pumpkin puree
  • 1 ¾ cups finely ground graham cracker crumbs
  • 1 teaspoon pumpkin pie spice
  • ½ teaspoon cinnamon
  • 12 ounces white chocolate chips
  • optional: extra graham cracker crumbs or english toffee bits

Instructions

  1. In a mixing bowl, combine softened cream cheese and powdered sugar. Beat until creamy and smooth.
  2. Mix in pumpkin puree and cinnamon until fully combined and smooth.
  3. Gradually add graham cracker crumbs, pumpkin pie spice, and cinnamon, mixing until thick and smooth.
  4. Transfer dough to a small bowl, cover, and refrigerate for about 2 hours.
  5. Prepare a baking sheet lined with parchment paper.
  6. Scoop a tablespoon of dough and roll into a ball, placing it on the baking sheet. Repeat with remaining dough, spacing them 2 inches apart.
  7. Chill truffles for 20-25 minutes before dipping in chocolate.
  8. In a microwave-safe bowl, add white chocolate chips and melt in intervals, stirring in between until smooth.
  9. Remove truffles from refrigerator and dip each into melted chocolate using a fork. Ensure they are fully coated.
  10. Lift truffles, scraping off excess chocolate, and place back on the parchment.
  11. Sprinkle with optional toppings immediately after dipping, then allow to set in the refrigerator before serving.

Notes

Make sure not to overheat the white chocolate when melting.
These truffles can be stored in the refrigerator for up to a week.
For a fun twist, add chopped nuts or coconut to the chocolate coating.
