  • 1 sheet puff pastry
  • 1/3 cup butter
  • 1/2 cup diced onion
  • 1/2 cup flour
  • 1 1/2 cups chicken broth
  • 1/4 cup dry white wine or additional chicken broth
  • 1/2 cup milk
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt
  • 2 cups frozen peas and carrots or mixed vegetables
  • 2 cups diced or shredded chicken
  • 1 egg yolk
  • 1 tablespoon water

Instructions

  1. Preheat the oven to 400℉.
  2. Thaw the puff pastry on the counter while preparing the filling.
  3. Melt butter in a skillet over medium heat.
  4. Sauté diced onion for 2-3 minutes until softened.
  5. Sprinkle flour over the onion and stir, cooking for 30-60 seconds.
  6. Slowly pour in chicken broth while stirring constantly until it thickens.
  7. Add in white wine (or more broth) and milk; bring to a boil.
  8. Remove from heat and stir in garlic powder, black pepper, salt, mixed vegetables, and chicken.
  9. Transfer the filling into a pie plate.
  10. Create an egg wash by whisking together egg yolk and water; set aside.
  11. Lay the puff pastry over the filling, trimming excess, and crimping the edges as desired.
  12. Cut vent holes in the puff pastry with a sharp knife.
  13. Brush the pastry with the egg wash.
  14. Bake in the preheated oven for 25-30 minutes until golden brown and bubbly, checking at 20 minutes and covering with foil if needed.
  15. Let cool for 5 minutes before serving.

Notes

For a richer filling, use additional chicken broth instead of white wine.
You can substitute fresh vegetables for the frozen mix if preferred.
Serve with a side salad for a complete meal.
