  • 1/2 teaspoon salt
  • 1 1/2 cups whole milk ricotta cheese
  • 3 large eggs, at room temperature
  • 1 1/2 teaspoons pure vanilla extract
  • 1/2 cup unsalted butter, melted and slightly cooled
  • 1 3/4 cups chopped peaches, 2-3 peaches
  • 1 cup confectioners’ sugar
  • 1 tablespoon honey
  • 1/2 teaspoon pure vanilla extract
  • 1 to 2 tablespoons whole milk

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Prepare the streusel topping by melting the butter in a medium saucepan over medium heat, stirring until browned, around 5 to 7 minutes. Let it cool in a bowl, then mix in flour and sugar, and refrigerate while preparing the cake.
  3. Whisk together 1 1/2 cups all-purpose flour, 1 cup granulated sugar, baking powder, cinnamon, and salt in a large bowl.
  4. In another bowl, mix the ricotta cheese, eggs, and vanilla, then gradually add the melted butter, whisking smoothly.
  5. Combine the ricotta mixture with the dry ingredients, stirring gently to avoid overmixing. Fold in the chopped peaches.
  6. Grease a 9-inch springform pan generously with nonstick spray. Pour the batter into the pan and sprinkle with streusel topping.
  7. Bake for 45 to 55 minutes until a toothpick inserted shows clean. Allow to cool in the pan for 30 minutes before removing sides.
  8. To make the honey glaze, whisk confectioners' sugar, honey, vanilla, and milk until smooth. Adjust milk to achieve desired consistency.
  9. Drizzle the glaze over the cooled cake, slice, and serve.
