- 1/4 cup powdered sugar
- 1/2 cup unsalted butter
- 1 cup light brown sugar
- 1/2 cup heavy cream
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1 8.8 oz package biscoff cookies
- 1–2 fresh peaches, thinly sliced (optional, for layering)
Instructions
- In a saucepan over medium heat, combine the peaches, both sugars, lemon juice, vanilla, cinnamon, and nutmeg.
- Cook for 5-7 minutes until the peaches soften and release their juices.
- In a small bowl, whisk cornstarch and water together, then mix it into the peach mixture.
- Continue cooking for an additional 2-3 minutes until the mixture thickens into a peach cobbler-like filling.
- Remove from heat and let it cool completely to room temperature.
Notes
For a creamier texture, blend the filling before cooling.
Feel free to add a layer of whipped cream on top for added richness.
