Description

These Peach Crumble Bars are a delightful treat with their irresistible flavors of ripe peaches and almond flour. Perfect as a comforting dessert, this easy recipe is great for sharing at gatherings or enjoying at home.


Ingredients

  • 3 cups ripe peaches diced small (about 5 medium)
  • 2 tablespoons maple sugar
  • 1 tablespoon tapioca flour
  • 1 teaspoon fresh lemon juice
  • 1/2 teaspoon vanilla extract
  • pinch sea salt
  • 2 1/2 cups blanched almond flour
  • 1/3 cup tapioca flour
  • 1/2 cup maple sugar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon sea salt
  • 1/2 cup refined coconut oil melted and cooled slightly
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract optional

Instructions

  1. Preheat the oven to 350°F and line an 8×8 inch baking pan with parchment paper.
  2. Prepare the peach filling by combining the peaches, maple sugar, tapioca flour, lemon juice, vanilla extract, and sea salt in a medium skillet over medium heat. Cook for 4-5 minutes, stirring occasionally, until the peaches soften and juices thicken.
  3. Remove from heat and let the peach filling cool while preparing the crust.
  4. In a large bowl, whisk together almond flour, tapioca flour, maple sugar, baking soda, and sea salt.
  5. Add melted coconut oil, egg, vanilla extract, and optional almond extract. Stir until a crumbly dough forms.
  6. Press about 2/3 of the dough into the prepared baking pan to form the crust.
  7. Bake the crust for 10-12 minutes until lightly golden at the edges.
  8. Allow the crust to cool for 5 minutes after removing it from the oven.
  9. Spread the peach filling evenly over the crust.
  10. Crumble the remaining dough over the peach filling in chunks.
  11. Bake for 30-35 minutes, or until the topping is golden brown and the peach filling bubbles at the edges.
  12. Let it cool completely at room temperature, then refrigerate for 1-2 hours before slicing for the best results.

Notes

You may substitute ghee or butter for coconut oil if preferred.
For extra flavor, consider adding cinnamon to the peach filling.
