- 2 tablespoons granulated sugar
- 2 tablespoons cornstarch
- 1 teaspoon ground cinnamon
- 1 teaspoon vanilla extract
- ¾ cup old-fashioned oats
- ¾ cup all-purpose flour
- ½ cup packed light brown sugar
- ½ teaspoon ground cinnamon
- ¼ teaspoon sea salt
- 6 tablespoons unsalted butter, melted
- 1 cup powdered sugar
- 2 tablespoons milk
- ½ teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (180°C) and line a 9-inch square baking pan with parchment paper, leaving overhang on two sides for easy removal.
- In a large bowl, combine the melted butter, granulated sugar, and vanilla extract, stirring until well mixed.
- Add the all-purpose flour and salt to the mixture, stirring until a soft dough forms.
- Press the dough uniformly into the bottom of the prepared baking pan.
- Bake for 15 minutes until the edges are lightly golden.
Notes
For a richer flavor, consider adding a bit more ground cinnamon to the peach filling.
These bars can be served warm or cooled and make a great pairing with ice cream!
