- 3 pounds ripe peaches, peeled, pitted and cut into 8 pieces
- 2/3 cup white granulated sugar
- 2 tablespoons corn starch
- 1 teaspoon vanilla
- ½ teaspoon cinnamon
- ¼ teaspoon salt
- ¾ cup dark brown sugar, packed
- ¾ cup white all-purpose flour
- 2/3 cup old fashioned rolled oats
- ½ teaspoon cinnamon
- ¼ teaspoon nutmeg
- ½ stick salted butter, cut into very small pieces
Instructions
- Preheat the oven to 350 degrees Fahrenheit.
- Grease a 9-inch baking dish with non-stick spray and set aside.
- In a large bowl, toss the sliced peaches with the sugar until coated and set aside.
- In a medium bowl, combine brown sugar, flour, rolled oats, cinnamon, and nutmeg.
- Incorporate the diced butter into the flour mixture using a pastry blender or fork until coarse crumbs form.
- Add vanilla, cornstarch, cinnamon, and salt to the peaches; toss to coat evenly.
- Pour the peach mixture into the prepared baking dish.
- Spread the crumb topping over the peaches evenly.
- Bake for 45-50 minutes, until the topping is golden brown and juices bubble at the edges.
- Remove from the oven and allow to rest for 15 minutes before serving.
- Serve with vanilla ice cream and a sprig of mint if desired.
Notes
For extra flavor, consider adding a pinch of cloves to the topping.
Make sure the peaches are ripe for best results.
