- 1 cup quick cooking oats
- 1 tablespoon chia seeds
- 1 cup milk
- 1.5 teaspoons vanilla extract
- 2 tablespoons maple syrup
- 1 cup chopped peaches
- ½ cup rolled oats
- 1 tablespoon maple syrup
- 1 teaspoon coconut oil
- ¼ teaspoon ground cinnamon
- Plain Greek yogurt
Instructions
- Preheat the oven to 375ºF. Prepare the crumble topping by mixing the oats, maple syrup, coconut oil, and cinnamon in a bowl until crumbly.
- Transfer the crumble mixture to a small baking sheet and bake until golden brown, about 7-10 minutes, stirring halfway through. Once done, remove from the oven and set aside.
- In a small saucepan, combine all ingredients for the oatmeal over medium/high heat.
- Bring the mixture to a boil, then lower the heat. Stir continuously for 3-5 minutes as the oatmeal cooks and thickens.
- Serve the oatmeal topped with the crumble and a dollop of Greek yogurt.

For added sweetness, adjust the maple syrup according to taste.
