Description

This Peach Cobbler Oatmeal features a delightful blend of quick oats, fresh peaches, and creamy yogurt, delivering comfort in every bite. Perfect for a healthy breakfast or a quick afternoon snack, it’s easy to prepare and bursting with flavor.


Ingredients

  • 1 cup quick cooking oats
  • 1 tablespoon chia seeds
  • 1 cup milk
  • 1.5 teaspoons vanilla extract
  • 2 tablespoons maple syrup
  • 1 cup chopped peaches
  • ½ cup rolled oats
  • 1 tablespoon maple syrup
  • 1 teaspoon coconut oil
  • ¼ teaspoon ground cinnamon
  • Plain Greek yogurt

Instructions

  1. Preheat the oven to 375ºF. Prepare the crumble topping by mixing the oats, maple syrup, coconut oil, and cinnamon in a bowl until crumbly.
  2. Transfer the crumble mixture to a small baking sheet and bake until golden brown, about 7-10 minutes, stirring halfway through. Once done, remove from the oven and set aside.
  3. In a small saucepan, combine all ingredients for the oatmeal over medium/high heat.
  4. Bring the mixture to a boil, then lower the heat. Stir continuously for 3-5 minutes as the oatmeal cooks and thickens.
  5. Serve the oatmeal topped with the crumble and a dollop of Greek yogurt.

Notes

Use fresh or frozen peaches based on availability.
For added sweetness, adjust the maple syrup according to taste.
Replace milk with your favorite non-dairy option for a vegan alternative.
