Description

Ingredients

  • 1 tsp baking soda
  • 1 tsp ground cinnamon
  • 1 tsp cornstarch
  • 1 tsp salt
  • 1 cup unsalted butter, room temperature
  • 1 cup brown sugar, packed light brown sugar
  • 1/2 cup white granulated sugar
  • 1 tsp pure vanilla extract
  • 1 tsp honey
  • 2 large eggs, room temperature
  • 2 tbsp unsalted butter, melted
  • 1/2 cup white granulated sugar
  • 2 tsp ground cinnamon
  • 4 peaches, 1 lb cubed
  • 2/3 cup brown sugar, light brown sugar packed
  • 1/2 tsp ground cinnamon
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch

Instructions

  1. In a medium bowl, combine flour, baking soda, cinnamon, cornstarch, and salt. Set aside.
  2. In a large bowl, beat together butter, brown sugar, and granulated sugar using a mixer on high speed for 2 minutes until pale and fluffy.
  3. Incorporate eggs, vanilla, and honey, mixing on medium speed until well combined. Gradually add dry ingredients, mixing on low until just blended.
  4. Preheat the oven to 350℉. Prepare two cookie sheets with parchment paper. Allow the cookie dough to rest for 10 minutes to prevent spreading.
  5. Utilize a large cookie scoop (2oz) to form cookie dough balls, placing 6 on each cookie sheet.
  6. Bake for 12-14 minutes until edges are lightly golden. Let cool for 2 minutes, then press the center of each cookie with a teaspoon to create an indent.
  7. Transfer cookies to the cookie sheet to cool completely.

Notes

For a touch of extra flavor, consider adding diced nuts or chocolate chips to the dough.
Make sure to use ripe peaches for the best sweetness and flavor in your cookies.
