Description

This Parmesan Crusted Chicken features juicy chicken breasts topped with a flavorful blend of cheeses and crispy panko breadcrumbs, making it a quick and delightful dinner option for any occasion.


Ingredients

  • 2 boneless skinless chicken breasts cut in half lengthwise
  • ¾ cup grated parmesan cheese divided
  • ½ cup shredded provolone cheese
  • 6 tablespoons unsalted butter melted and divided
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • ½ cup panko breadcrumbs

Instructions

  1. Preheat a grill pan over medium-high heat.
  2. In a small mixing bowl, combine 4 tablespoons of melted butter with garlic powder, onion powder, salt, and pepper. Brush the mixture over each chicken breast.
  3. Cook the chicken breasts on the preheated grill for 3-4 minutes, then flip them over.
  4. In a medium bowl, mix together ½ cup of parmesan cheese and provolone cheese. Set aside.
  5. Top the chicken with the cheese mixture and cook for another 3-4 minutes until the internal temperature reaches 165°F.
  6. Transfer the chicken to a baking sheet lined with foil.
  7. Preheat the oven's broiler on high.
  8. In a separate bowl, combine panko breadcrumbs with the remaining ¼ cup parmesan cheese and 2 tablespoons of melted butter. Sprinkle the mixture over each chicken breast.
  9. Broil in the oven for 1-2 minutes or until breadcrumbs are golden, watching carefully to prevent burning.
  10. Remove from the broiler and let the chicken rest for 5 minutes before serving.

Notes

Feel free to adjust the cheese types according to your preference.
Make sure to monitor the broiler to avoid burning the breadcrumbs.
