- 2 cups fresh peaches
- 3 tbsp lemon juice
- 1 (14 oz) can sweetened condensed milk
- 1 tsp vanilla
- 1/2 tsp salt
- 2 cups heavy whipping cream
Instructions
- Peel, pit, and slice enough peaches to yield 2 cups. Place the peaches in a food processor, add lemon juice, and blend until pureed.
- In the processor, add sweetened condensed milk, vanilla, and salt. Blend everything together until well mixed with the peach puree. Set the mixture aside.
- In a large mixing bowl, beat heavy whipping cream using a mixer until it achieves stiff peaks, which takes about 5 minutes.
- Carefully fold the peach puree mixture into the whipped cream until well combined.
- If desired, peel, pit, and slice additional peaches to layer with the ice cream mixture.
- Layer the ice cream into a large loaf pan starting with ice cream on the bottom, followed by peach slices, then more ice cream, and repeat until finished.
- Cover and freeze the mixture overnight.
Notes
For a more intense peach flavor, use ripe, seasonal peaches.
