- ½ cup boiling water
- ½ cup cold water
- 1 (8-ounce) tub cool whip, thawed
- 1½ cups diced seedless watermelon, blotted dry
- 1 (9-inch) graham cracker pie crust
- Watermelon slices, mint leaves (optional for decoration)
Instructions
- In a medium bowl, stir the watermelon jell-o into ½ cup of boiling water until fully dissolved.
- Add ½ cup of cold water and mix well. Allow it to cool on the counter for about 10 to 15 minutes.
- Gently fold in the Cool Whip until the mixture is smooth, then add the diced watermelon and mix.
- Spoon the filling into the graham cracker crust, smoothing the top.
- Refrigerate for at least 4 hours until set and firm throughout.
- Slice and serve chilled; decorate with additional Cool Whip, watermelon cubes, or mint leaves if desired.
- Store covered in the fridge for up to 3 days, but avoid freezing.
