Ingredients

  • seasoning or Diamond Crystal kosher salt
  • 2 tablespoons paleo mayonnaise

Instructions

  1. Slice the chicken breasts horizontally into thin cutlets. Pound them to ensure even thickness.
  2. Sprinkle both sides of the cutlets with seasoning or salt from up high.
  3. Brush a thin layer of mayonnaise on both sides of each cutlet to help the seasoning stick and maintain juiciness.
  4. Heat a heavy bottomed 12-inch skillet over medium-high heat until hot.
  5. Place the cutlets in a single layer in the skillet. Cook undisturbed for about 90 seconds per side. Continue flipping every 30–60 seconds until browned and the thickest part reaches 150–155°F, checking with a meat thermometer.
  6. Remove the chicken from the pan and let it rest for about 5 minutes before serving.
