Description

These Meal Prep Breakfast Burritos are packed with irresistible flavors and fresh ingredients. With chicken sausage, eggs, and cheese, they’re perfect for quick, homemade breakfasts any day of the week.


Ingredients

Scale
  • 1 lb meat, chicken sausage, bacon, ground beef, etc.
  • 2 cups veggies, tomatoes, zucchini, bell pepper, red onion, mushrooms
  • Pinch salt
  • 12 eggs
  • 1 cup cottage cheese
  • 10 burrito-sized tortillas
  • 1 cup cheddar cheese, shredded

Instructions

  1. Cook the meat in a medium skillet over medium heat until fully cooked.
  2. Remove the meat with a slotted spoon and transfer it to a bowl.
  3. In the same skillet, add the vegetables and a pinch of salt; sauté until soft, about 3-5 minutes.
  4. In a large bowl, whisk together the eggs, cottage cheese, and season with salt and pepper.
  5. Pour the egg mixture into the skillet with the sautéed vegetables, cooking until scrambled.
  6. To assemble, lay a tortilla flat and add ¾ cup of the egg mixture, along with 2 tablespoons of meat and 2 tablespoons of cheese on top.
  7. Fold in the sides of the tortilla and roll it up to create a burrito.
  8. Repeat until all ingredients are used up and assemble the burritos.
  9. For storage, wrap each burrito in foil and freeze on a baking sheet. Once frozen, move them to a bag or container and store for up to 2 months.
  10. Alternatively, they can be stored wrapped in foil in the fridge for up to 1 week.
  11. Reheat the burritos in the microwave until heated through or bake in the oven at 375°F for 15-20 minutes.
