Description

These Marinated Tomatoes are bursting with flavor! With juicy tomatoes, aromatic garlic, and fresh herbs, this easy recipe is ideal for appetizers or sides.


Ingredients

  • 1 pound grape or cherry tomatoes, halved
  • 3 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1 tablespoon balsamic vinegar
  • 1 to 2 cloves garlic, grated
  • 1 tablespoon finely chopped basil
  • 1/2 tablespoon finely chopped fresh parsley
  • 1 teaspoon finely chopped fresh thyme
  • dash of crushed red pepper flakes
  • kosher salt, to taste

Instructions

  1. In a medium bowl, combine the halved tomatoes, olive oil, red wine vinegar, balsamic vinegar, grated garlic, chopped basil, parsley, thyme, crushed red pepper flakes, and salt. Mix until well combined.
  2. Cover the bowl tightly with plastic wrap and let it sit at room temperature for at least 30 minutes, preferably 1 to 2 hours. Stir the mixture once or twice to ensure even marination. If marinating for longer than 2 hours, refrigerate to keep the tomatoes fresh.

Notes

For the best flavor, let the tomatoes marinate for 1 to 2 hours at room temperature.
This dish can also be served cold from the fridge after marinating.
Feel free to add more herbs or spices to personalize the flavor.
