- 1 ½ cup cooked green lentils, drained
- ¼ cup crumbled feta
- 3 tablespoons chopped parsley
- 2 tablespoons chopped onion
- 1 tablespoon extra virgin olive oil, plus more for drizzling
- ½ tablespoon lemon juice
- ¼ teaspoon salt, or to taste
- ⅛ teaspoon pepper, or to taste
- 6 slices of bread (ciabatta or artisanal bread)
Instructions
- In a salad bowl, place the cooked lentils and smash half of them with the back of a spoon or a fork.
- Add the crumbled feta, chopped parsley, chopped onion, olive oil, lemon juice, salt, and pepper to the smashed lentils. Mix well and adjust seasoning to taste.
- Preheat the oven to 200°C (400°F). Arrange the sliced bread on a baking tray and toast until golden and slightly crispy, about 5 minutes, keeping a close eye to avoid burning.
- Top each slice of toasted bread with a generous spoonful of the lentil mixture. Optionally, rub a garlic clove on the bread before adding the lentil dip for extra flavor.
- Serve at room temperature and enjoy!
