- zest of one lemon
- juice of one lemon
- 1/2 teaspoon kosher salt
- dash freshly ground black pepper
- 1/3 cup grated parmesan cheese
Instructions
- Boil a large pot of water and season it with salt. Cook the spaghetti according to package instructions, reserving 1 cup of pasta water before draining.
- While the spaghetti cooks, heat a skillet over medium heat and melt the butter. Add garlic and lemon zest, cooking until fragrant, around one minute. Stir in lemon juice, 1/2 cup of reserved pasta water, salt, and pepper, whisking to combine.
- Add the drained spaghetti to the skillet and toss thoroughly. Mix in the parmesan cheese, adjusting with reserved pasta water to achieve a smooth sauce. Season with additional salt and pepper if desired.
Notes
Feel free to add some fresh herbs like parsley for added flavor.
Make sure to reserve enough pasta water for a creamy texture in the sauce.
