Ingredients
Scale
- 1 homemade or store-bought pie crust
- 1 cup granulated sugar
- ⅓ cup cornstarch
- 2 tablespoons cocoa powder
- ¼ tsp salt
- 2 ¾ cups whole milk, divided
- 4 large egg yolks, reserved the whites for meringue
- 6 oz bittersweet chocolate, chopped
- 2 tbsp unsalted butter
- 1 ½ tsp vanilla extract
- 4 large egg whites, room temperature
- ¼ tsp salt
- ½ tsp cream of tartar
- 2/3 cup granulated sugar
- ½ tsp vanilla extract
Instructions
- Roll out the pie dough and fit it into a 9-inch pie dish, trimming and crimping the edges as desired.
- Chill the crust in the fridge for 30 minutes or the freezer for 15 minutes to prevent shrinking.
- Use a fork to prick the base of the crust all over to prevent puffing.
- Line the crust with parchment paper or foil, covering the bottom and sides, and fill it with pie weights, dried beans, or sugar.
- Bake the crust at 375°F for 20 minutes.
- Carefully remove the parchment and weights, then return the crust to the oven to bake uncovered for an additional 10-15 minutes until the bottom is dry and lightly golden brown.
- Cool the crust completely before adding the filling.
Notes
Make sure to properly chill the pie crust to avoid shrinking while baking.
Use room temperature egg whites for a more stable meringue.
Feel free to adjust the sweetness of the chocolate according to your taste.
