- 1 cup long grain rice
- 1 cup black beans, drained and rinsed

- 1 head romaine lettuce, chopped
- 1/2 cup shredded cheddar cheese
- 1/4 cup pickled onions
- 1/4 cup chopped cilantro
- 1/4 ranch dressing
Instructions
- Cook the rice according to package instructions.
- Heat the olive oil in a large skillet over medium heat.

- Cook the chicken in the skillet for about 6-7 minutes on each side or until thoroughly cooked.
