- 1 cup unsweetened cinnamon applesauce
- 3/4 cup milk
- 2 tablespoons maple syrup
- 2 teaspoons vanilla extract
- 2 1/2 cups rolled oats (250 grams)
- 1 1/2 teaspoons cinnamon
- 1/4 teaspoon nutmeg
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 2 cups diced apple (235 grams)
Instructions
- Preheat your oven to 350°F and prepare a muffin tin with silicone muffin liners or grease it.
- In a large bowl, combine the wet ingredients: applesauce, milk, maple syrup, and vanilla. Mix well.
- Add the dry ingredients: oats, cinnamon, nutmeg, baking powder, and salt to the wet mixture and stir thoroughly. Fold in the diced apples.
- Scoop the mixture into the muffin tins, filling each about 3/4 full. Bake for 25-28 minutes until golden on top.
- Allow the muffins to cool, sprinkle with cinnamon if desired, and enjoy!
Notes
Store leftover muffins in an airtight container for up to three days.
These muffins freeze well. Pack them in a freezer-safe bag for enjoying later.
Feel free to replace maple syrup with honey for a different taste.
