  • 1.5 teaspoons baking powder
  • ¼ teaspoon salt
  • 2 teaspoons cinnamon

  • 2 cups diced granny smith apples, peeled, divided
  • ¼ cup avocado oil
  • ½ cup packed light brown sugar
  • 1 cup cottage cheese, 4%, blended smooth
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 tablespoons brown sugar
  • 1 teaspoon cinnamon
  • ¼ cup powdered sugar
  • 1 tablespoon milk

Instructions

  1. Preheat your oven to 425°F and line 6 wells of a standard 12-cup muffin tin with paper liners, skipping a well between each one.
  2. In a large bowl, whisk together the flour, baking powder, salt, cinnamon, and nutmeg until no streaks remain.
  3. Add 1.5 cups of diced Granny Smith apple to the dry ingredients and toss until coated in flour.
  4. In a separate bowl, whisk the avocado oil, brown sugar, blended cottage cheese, eggs, and vanilla until smooth.
  5. Pour the wet mixture into the dry ingredients and fold until no streaks of flour remain.
  6. Divide the batter among the prepared muffin liners, filling each to the top.
  7. In a small bowl, mix the topping brown sugar and cinnamon, then sprinkle over the muffins and add the reserved apple pieces.
  8. Bake at 425°F for 5 minutes, then reduce the temperature to 350°F and continue baking for 13-18 minutes.
  9. Cool for 5-10 minutes before removing from the tin, then repeat for remaining batter.
  10. (Optional) Drizzle a mixture of powdered sugar and milk over cooled muffins.

Notes

For a richer flavor, use additional cinnamon in the batter or topping.
