This grilled tri-tip steak is bursting with flavor and simplicity. With a savory blend of spices and a homemade barbecue sauce, it’s an ideal choice for a quick dinner or a gathering with friends.

- 2 to 2 ½ pounds tri-tip roast, about 1½ inches thick
- 1 tablespoon freshly ground black pepper
- 2 teaspoons garlic salt
- 1 teaspoon mustard powder
- 1 teaspoon paprika
- ¼ teaspoon cayenne pepper
- 1 handful oak, mesquite, or hickory wood chips
- ½ cup ketchup
- ¼ cup steak sauce
- 1 teaspoon garlic powder
- 2 tablespoons granulated sugar
- 1 tablespoon worcestershire sauce
- 1 tablespoon cider vinegar
- 2 tablespoons water
Instructions
- Combine the seasoning rub by mixing black pepper, garlic salt, mustard powder, paprika, and cayenne pepper in a small bowl. Press this mixture firmly into all sides of the tri-tip roast. Wrap the roast in plastic wrap and refrigerate for at least 3 hours, or up to 24 hours.
- Soak the wood chips in water for at least 30 minutes before grilling.
- Make the barbecue sauce by stirring together ketchup, steak sauce, garlic powder, sugar, Worcestershire sauce, cider vinegar, and water in a small saucepan. Cook for 5 minutes and let cool before transferring to a container. Refrigerate until needed.
- Prepare the grill for two-zone cooking, aiming for a temperature between 350°F to 450°F. Clean the cooking grates and add the soaked wood chips. Close the lid until smoke appears before adding the meat.
- Sear the tri-tip directly over the fire for about 5 minutes, turning once to achieve a nice sear. Move the roast to the indirect heat zone and cook for an additional 20 to 30 minutes until the internal temperature reaches 140°F for medium rare. Let rest for 5 to 10 minutes under foil.
- Slice the tri-tip against the grain into thin pieces. Serve immediately, topped with barbecue sauce or on the side.
Notes
For a spicier kick, increase the cayenne pepper amount to your taste.
Always allow the meat to rest before slicing to retain juices.
