Description

Grilled Chicken Sandwiches are perfect for summer gatherings with their irresistible flavor and fresh ingredients. Prepare tender chicken breasts and layer them with creamy aioli, ripe avocados, crispy bacon, and more, for a satisfying meal that everyone will love.


Ingredients

  • 4 boneless skinless chicken breasts, about 68 oz each
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 ½ teaspoons salt
  • Black pepper, to taste, optional
  • Avocado oil, or other high-heat oil
  • 1 cup mayonnaise
  • 3 cloves garlic, minced
  • 1 tablespoon dijon mustard, or add siracha to taste for a spicy version
  • 1 tablespoon lemon juice
  • 4 brioche buns or ciabatta rolls
  • 2 avocados, sliced
  • 1 large tomato, sliced
  • lettuce leaves or arugula
  • 8 slices crispy bacon
  • ½ red onion, thinly sliced
  • Dill pickles
  • hot honey for drizzling

Instructions

  1. Prepare the garlic aioli by mixing all the ingredients in a small bowl. Cover and set aside.
  2. Dry the chicken breasts and preheat the grill to medium-high heat. Combine garlic powder, paprika, salt, and black pepper in a small bowl. Rub the chicken with avocado oil and coat evenly with the seasoning.
  3. Grill the chicken for 4-7 minutes per side or until the internal temperature reaches 165°F (74°C). Let rest for a few minutes before assembling.
  4. Slice the brioche buns and lightly toast them on the grill while the chicken rests.
  5. Spread garlic aioli on the bottom half of each toasted bun and place a grilled chicken breast on top.
  6. Add avocado slices, tomato slices, lettuce leaves, and two slices of crispy bacon on each sandwich. If desired, include pickle slices.
  7. Drizzle hot honey over the top according to spice preference.
  8. Cover each sandwich with the top bun and serve immediately.
