- 1/2 cup vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- as needed green gel food coloring
- 12 oz white chocolate melting wafers
- 2 tablespoons sprinkles
Instructions
- Preheat your oven to 350°F (175°C).
- Line a large cookie sheet with parchment paper or a silicone baking mat.
- In a large mixing bowl, combine the cake mix, vegetable oil, eggs, and vanilla extract. Add green gel food coloring to achieve the desired shade.
- Mix with a hand mixer or spatula until a thick dough forms, then cover and chill for 30 minutes.
- Scoop 1-inch balls of dough and place them 2 inches apart on the prepared sheet.
- Bake for 8 to 10 minutes, until cookies look set but remain soft; avoid overbaking.
- After baking, let the cookies cool on the pan for 5 minutes before transferring them to a wire rack to cool completely.
- In the meantime, melt the white chocolate in the microwave in 30-second intervals, stirring until smooth.
- Once cookies are cooled, dip half into the melted chocolate and immediately sprinkle with toppings.
- Allow the cookies to sit at room temperature or in the fridge for 5 minutes until the chocolate firms.
Notes
For a more vibrant color, add more green gel food coloring as desired.
Store cookies in an airtight container at room temperature for up to a week.
