Description

These Green Cake Mix Cookies are a delightful, easy dessert bursting with flavor. Made with simple ingredients like white cake mix and white chocolate, they’re perfect for celebrations or just a sweet treat at home.


Ingredients

  • 13.25 oz white cake mix
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • as needed green gel food coloring
  • 12 oz white chocolate melting wafers
  • 2 tablespoons sprinkles

Instructions

  • Preheat your oven to 350°F (175°C).
  • Line a large cookie sheet with parchment paper or a silicone baking mat.
  • In a large mixing bowl, combine the cake mix, vegetable oil, eggs, and vanilla extract. Add green gel food coloring to achieve the desired shade.
  • Mix with a hand mixer or spatula until a thick dough forms, then cover and chill for 30 minutes.
  • Scoop 1-inch balls of dough and place them 2 inches apart on the prepared sheet.
  • Bake for 8 to 10 minutes, until cookies look set but remain soft; avoid overbaking.
  • After baking, let the cookies cool on the pan for 5 minutes before transferring them to a wire rack to cool completely.
  • In the meantime, melt the white chocolate in the microwave in 30-second intervals, stirring until smooth.
  • Once cookies are cooled, dip half into the melted chocolate and immediately sprinkle with toppings.
  • Allow the cookies to sit at room temperature or in the fridge for 5 minutes until the chocolate firms.

Notes

For a more vibrant color, add more green gel food coloring as desired.
Store cookies in an airtight container at room temperature for up to a week.
