Description

Ingredients

  • 1/4 cup olive oil
  • 1/3 cup fresh lemon juice
  • 2 tablespoons lemon zest (about the zest of two lemons)
  • 1 small shallot diced fine
  • 4 garlic cloves
  • 1 tablespoon dijon mustard
  • 1 tablespoon dried oregano
  • 1 1/2 teaspoons kosher salt
  • 1 teaspoon dried thyme
  • 1/2 teaspoon paprika
  • 1/4 teaspoon black pepper
  • 4 pounds bone-in skin on chicken thighs

Instructions

  1. Combine the marinade ingredients in a large bowl.
  2. Add chicken thighs to the bowl and toss well to coat them. Cover and refrigerate for a minimum of 30 minutes or up to 24 hours.
  3. Preheat your oven to 400 degrees Fahrenheit.
  4. Place the marinated chicken into a baking dish and pour the marinade over it.
  5. Cover the dish and bake for 45 to 55 minutes, or until the chicken reaches an internal temperature of 165 degrees Fahrenheit.
  6. Uncover the chicken and activate the broiler for an additional 2 to 3 minutes, watching closely to avoid burning, to achieve crisp skin.

Notes

For best results, marinate the chicken overnight to enhance flavor.
Use a meat thermometer to ensure the chicken is cooked through.
Serve with a side of Greek salad or rice for a complete meal.
