- 1/4 cup olive oil
- 1/3 cup fresh lemon juice
- 2 tablespoons lemon zest (about the zest of two lemons)
- 1 small shallot diced fine
- 4 garlic cloves
- 1 tablespoon dijon mustard
- 1 tablespoon dried oregano
- 1 1/2 teaspoons kosher salt
- 1 teaspoon dried thyme
- 1/2 teaspoon paprika
- 1/4 teaspoon black pepper
- 4 pounds bone-in skin on chicken thighs
Instructions
- Combine the marinade ingredients in a large bowl.
- Add chicken thighs to the bowl and toss well to coat them. Cover and refrigerate for a minimum of 30 minutes or up to 24 hours.
- Preheat your oven to 400 degrees Fahrenheit.
- Place the marinated chicken into a baking dish and pour the marinade over it.
- Cover the dish and bake for 45 to 55 minutes, or until the chicken reaches an internal temperature of 165 degrees Fahrenheit.
- Uncover the chicken and activate the broiler for an additional 2 to 3 minutes, watching closely to avoid burning, to achieve crisp skin.
Notes
For best results, marinate the chicken overnight to enhance flavor.
Use a meat thermometer to ensure the chicken is cooked through.
