- 2 tablespoons butter
- 1 tablespoon olive oil
- 3 yellow onions, thinly sliced
- 1 tablespoon minced fresh thyme leaves
- 2 teaspoons dijon mustard
- 1 tablespoon balsamic vinegar
- 1 1/2 lbs grass-fed 85/15 ground beef
- 1 tablespoon worcestershire
- 1 tablespoon dijon mustard
- 1 tablespoon dehydrated minced onions
- 1 1/2 teaspoons garlic powder
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 4 brioche buns, toasted in butter
- 8 oz double cream brie, cut into slices
- 2 cups arugula
- 1/2 cup mayonnaise
- 1 teaspoon prepared horseradish
- 1 tablespoon dijon mustard
- 1 teaspoon honey
Instructions
- Melt the butter and olive oil in a large dutch oven over medium heat for caramelizing onions. Add the onions and cook for 10 minutes covered until they wilt.
- Remove the lid and reduce the heat; add thyme, salt, and pepper, stirring occasionally until the onions are deeply caramelized. Stir in dijon and balsamic vinegar, then set aside.
- Finely chop half of the cooled caramelized onions and combine them in a bowl with the ground beef, Worcestershire sauce, dijon, dehydrated onions, garlic powder, salt, and pepper. Mix gently before forming the mixture into 4 patties, pressing an indentation in each.
- In a separate bowl, whisk together mayonnaise, dijon mustard, horseradish, and honey; season with salt and black pepper to taste for the burger sauce.
- Preheat the grill to 450°F and clean the grates. Lightly oil the grates to prevent sticking.
- Grill the beef patties for 3-4 minutes on each side. Remove from the grill and place slices of brie on the patties to melt slightly.
- Spread the burger sauce on toasted buns, add the patties, top with remaining caramelized onions and arugula, and serve immediately.
Notes
Feel free to substitute the brie with your favorite cheese if desired.
To enhance flavor, consider adding more herbs or spices to the burger mixture.
These burgers can be cooked on a skillet if a grill is not available.
