Description

Ingredients

  • 2 tablespoons butter
  • 1 yellow onion, chopped
  • 1/3 cup crumbled blue cheese
  • 1/4 cup panko breadcrumbs
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon coarse ground black pepper
  • 2 tablespoons unsalted butter
  • 4 beef tenderloin, filet mignon steaks (~8 ounces each)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon coarse ground black pepper

Instructions

  • Preheat the oven to 450 degrees.
  • In a large skillet, melt 2 tablespoons of butter over medium heat.
  • Add the chopped onion and cook, stirring occasionally for 3-4 minutes until translucent.
  • Transfer the cooked onions to a large mixing bowl and let cool for 2-3 minutes.
  • Mix in the crumbled blue cheese, panko breadcrumbs, salt, and pepper until combined.
  • In the same skillet, add the remaining 2 tablespoons of unsalted butter and increase the heat to high.
  • Season the filet mignon steaks with salt and pepper on all sides.
  • Quickly sear the steaks for 3 minutes on each side until browned.
  • Top the seared steaks with the blue cheese mixture and place in the oven for 4 minutes for rare (5-6 minutes for medium or longer for well done).
  • Let the steaks rest for 10 minutes, covered with foil, before serving.

Notes

Ensure steaks are at room temperature before cooking for even cooking.
Experiment with different cheeses such as goat or feta for a twist.
Covering the steaks while resting helps retain moisture.
