- 4 beef tenderloin, filet mignon steaks (~8 ounces each)

Instructions
- Preheat the oven to 450 degrees.
- In a large skillet, melt 2 tablespoons of butter over medium heat.
- Add the chopped onion and cook, stirring occasionally for 3-4 minutes until translucent.
- Transfer the cooked onions to a large mixing bowl and let cool for 2-3 minutes.
- Mix in the crumbled blue cheese, panko breadcrumbs, salt, and pepper until combined.
- In the same skillet, add the remaining 2 tablespoons of unsalted butter and increase the heat to high.
- Season the filet mignon steaks with salt and pepper on all sides.
- Quickly sear the steaks for 3 minutes on each side until browned.
- Top the seared steaks with the blue cheese mixture and place in the oven for 4 minutes for rare (5-6 minutes for medium or longer for well done).
- Let the steaks rest for 10 minutes, covered with foil, before serving.
