Description

These Easy Vegan Stuffed Cabbage Rolls are full of irresistible flavors and make for a quick, healthy meal. Packed with vegan ground beef, rice, and aromatic spices, they are perfect for any dinner table.


Ingredients

  • 2 tablespoons olive oil
  • ½ yellow onion, minced
  • ½ teaspoon salt
  • 3 cloves garlic, minced
  • 28 oz tomato sauce
  • 1 cup vegetable broth
  • Pinch of sugar
  • ¼ teaspoon black pepper
  • 24 oz vegan ground beef
  • 1 cup parboiled white rice
  • ¼ cup grated carrot
  • ¼ cup raisins (optional)
  • 2 tablespoons chopped fresh parsley
  • 2 cloves garlic, minced
  • ½ teaspoon smoked paprika
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • 1 medium green cabbage
  • Fresh dill, chopped (for garnish)

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add minced onion and salt, and sauté until translucent, about 2-3 minutes.
  2. Stir in garlic and sauté for an additional 2 minutes until fragrant.
  3. Add tomato sauce, vegetable broth, sugar, and black pepper. Mix well and bring to a simmer.
  4. Allow to simmer for 10 minutes, stirring occasionally. Taste and adjust salt and pepper, then set aside.

Notes

For a spicier kick, consider adding red pepper flakes to the filling.
Ensure the cabbage leaves are tender before stuffing by blanching them in hot water for a few minutes.
Store leftovers in an airtight container for up to 3 days in the refrigerator.
