- ½ yellow onion, minced
- ½ teaspoon salt
- 3 cloves garlic, minced
- 28 oz tomato sauce
- 1 cup vegetable broth
- Pinch of sugar
- ¼ teaspoon black pepper
- 24 oz vegan ground beef
- 1 cup parboiled white rice
- ¼ cup grated carrot
- ¼ cup raisins (optional)
- 2 tablespoons chopped fresh parsley
- 2 cloves garlic, minced
- ½ teaspoon smoked paprika
- 1 teaspoon salt
- ¼ teaspoon black pepper
- 1 medium green cabbage
- Fresh dill, chopped (for garnish)
Instructions
- Heat olive oil in a large skillet over medium heat. Add minced onion and salt, and sauté until translucent, about 2-3 minutes.
- Stir in garlic and sauté for an additional 2 minutes until fragrant.
- Add tomato sauce, vegetable broth, sugar, and black pepper. Mix well and bring to a simmer.
- Allow to simmer for 10 minutes, stirring occasionally. Taste and adjust salt and pepper, then set aside.
Notes
For a spicier kick, consider adding red pepper flakes to the filling.
Ensure the cabbage leaves are tender before stuffing by blanching them in hot water for a few minutes.
Store leftovers in an airtight container for up to 3 days in the refrigerator.
