Instructions
- In a large bowl, whisk together the flour, sugar, and salt.
- Cut in the cold butter using a pastry blender (or two forks) until the mixture resembles coarse, pebbled sand.
- Add the egg yolks and ice water, mixing with a spatula until it looks like a shaggy mess.
- Transfer the mixture to a clean surface and gently knead until it forms a cohesive dough, being careful not to overwork it.
- Divide the dough into two equal parts, flatten into disks, wrap in plastic, and chill for at least 30 minutes or store for up to 2 days.
- This recipe yields two pie crusts; use one now and freeze the other for later.
