Description

Easy Cowboy Caviar is a vibrant and flavorful dish that combines black beans, fresh vegetables, and a zesty dressing. It’s perfect for parties or a healthy snack, bringing a burst of taste and nutrition to any table. This crowd-pleaser is simple to prepare and great for gatherings or casual dinners.


Ingredients

  • 2 (15-ounce) cans black beans, drained and rinsed
  • 1 (15-ounce) can black-eyed peas, drained and rinsed
  • 1 large red bell pepper, seeded and diced
  • 1 large yellow bell pepper, seeded and diced
  • 2 fresh jalapeños, seeded and diced
  • 1 ½ cups frozen corn kernels, thawed and drained
  • ½ cup finely diced red onion
  • ½ cup finely chopped fresh cilantro
  • 1 cup fresh seeded and diced tomato, optional
  • 2 fresh avocados, diced and added just before serving, optional
  • ¼ cup red wine vinegar
  • 2 heaping tablespoons honey
  • 1 fresh lime, juiced
  • 1 tablespoon fine sea salt
  • 2 chipotles in adobo, plus 2 teaspoons sauce from the can
  • 1 cup avocado or vegetable oil
  • 1 teaspoon dried oregano
  • 1 teaspoon black pepper

Instructions

  1. In a large bowl, combine the black beans, black-eyed peas, red bell pepper, yellow bell pepper, jalapeños, corn, red onion, cilantro, and diced tomatoes if using.
  2. In a blender, blend together the red wine vinegar, honey, lime juice, fine sea salt, chipotles, and their sauce until smooth. With the blender running on low, slowly stream in the oil until the dressing thickens and emulsifies. Stir in the dried oregano and black pepper, adjusting seasonings to taste.
  3. Pour half of the dressing over the beans and vegetable mixture, stirring to combine. Cover and refrigerate for at least 3 hours before serving.
  4. Before serving, stir the cowboy caviar again and add more dressing if desired. If using fresh avocados, stir them in just before serving. Extra dressing can be refrigerated for a few days and makes a great marinade.
  5. Serve with tortilla chips or as a tasty topping for tacos.

Notes

For extra flavor, let the cowboy caviar sit overnight after preparing.
Adjust the heat level by adding more or less jalapeño and chipotle based on your preference.
Fresh avocados should be added right before serving to prevent browning.
