  • 13.25 oz white cake mix box
  • ½ cup unsalted butter (113 g), melted, slightly cooled
  • 2 large eggs
  • 5 tablespoons rainbow confetti sprinkles, plus more for rolling
  • 1 teaspoon pure vanilla extract, optional
  • ¼ teaspoon almond extract, optional

Instructions

  1. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, combine the dry cake mix, melted butter, eggs, and optional extracts. Stir until a thick dough forms.
  3. Add the rainbow sprinkles and gently fold them into the dough without over-mixing.
  4. Allow the dough to rest uncovered for about 5 minutes. It will thicken as it absorbs moisture.
  5. Using a medium cookie scoop (size #40 or 1.5 Tbsp), portion out the dough.
  6. Roll each cookie ball in additional sprinkles, pressing gently to ensure they stick.
  7. Place the coated cookie dough balls on the prepared baking sheets, keeping them about 3 inches apart. Bake for 10-12 minutes until the edges are set but the centers remain slightly underdone.
  8. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack.

Notes

For extra flavor, consider adding both vanilla and almond extract.
Ensure the butter is melted and slightly cooled before mixing to prevent the eggs from cooking.
If desired, add more sprinkles on top after baking for an extra colorful touch.
