- ½ cup unsalted butter (113 g), melted, slightly cooled
- 2 large eggs
- 5 tablespoons rainbow confetti sprinkles, plus more for rolling
- 1 teaspoon pure vanilla extract, optional
- ¼ teaspoon almond extract, optional
Instructions
- Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large bowl, combine the dry cake mix, melted butter, eggs, and optional extracts. Stir until a thick dough forms.
- Add the rainbow sprinkles and gently fold them into the dough without over-mixing.
- Allow the dough to rest uncovered for about 5 minutes. It will thicken as it absorbs moisture.
- Using a medium cookie scoop (size #40 or 1.5 Tbsp), portion out the dough.
- Roll each cookie ball in additional sprinkles, pressing gently to ensure they stick.
- Place the coated cookie dough balls on the prepared baking sheets, keeping them about 3 inches apart. Bake for 10-12 minutes until the edges are set but the centers remain slightly underdone.
- Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack.
Notes
For extra flavor, consider adding both vanilla and almond extract.
