Description

These Easy Caramel Apple Empanadas are a delightful treat combining sweet apple pie filling and creamy cheesecake. With a buttery crust and rich caramel glaze, they’re perfect for any occasion, offering a homemade touch that’s sure to impress!


Ingredients

  • 2 boxes refrigerated pie crust 14.1 ounce each
  • 1 can apple pie filling 20 ounce
  • 1 package cream cheese, softened 8 ounce
  • ⅔ cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 large egg separated
  • 2 ½ cups powdered sugar
  • ¼ cup caramel ice cream topping
  • 2 tablespoons milk

Instructions

  1. Preheat the oven to 425°F. Remove pie crusts from the packaging and let them reach room temperature.
  2. Separate the egg white from the egg yolk into two small bowls. Whisk each separately and set them aside.
  3. Pour the apple pie filling into a small bowl and chop the apple slices into small pieces. Set aside.
  4. In a mixing bowl, beat together the cream cheese, granulated sugar, and vanilla extract until smooth and creamy.
  5. Unroll the pie crusts and cut out 4-inch circles using a biscuit cutter. Re-roll the scraps to create more circles.
  6. Use a 1 Tbsp scoop to add half a scoop of apple pie filling and half a scoop of cream cheese filling into the center of each circle. Brush the edges with the whisked egg white.
  7. Fold each empanada in half and pinch the edges to seal, using a fork if desired. Place them on a parchment-lined baking sheet and repeat with the remaining dough.
  8. Prick each empanada with a fork before baking. Brush the tops with the whisked egg yolk for a shiny finish.
  9. Bake the empanadas for about 15 minutes or until golden brown. Let them cool on a wire rack.
  10. Prepare the glaze by whisking together powdered sugar, caramel topping, and milk, adjusting the milk for desired thickness. A thicker glaze requires less milk.
  11. Dip cooled empanadas into the caramel glaze and place them back on the parchment paper to set.

Notes

For best results, ensure the cream cheese is fully softened for easy mixing.
Feel free to add cinnamon or nutmeg to the apple filling for extra flavor.
These empanadas can be stored in an airtight container for up to three days.
